Weight Watchers Brown Rice and Lentil Casserole recipe
Makes 6 servings
Ingredients
1/2 cup brown rice
3/4 cup lentils
3/4 cup chopped onion
3 cups chicken or vegetable broth
1/4 teaspoon garlic powder
1 teaspoon Italian seasoning
1 cup grated Cheddar cheese
Preparation
1. Preheat the oven to 300 degrees F.
2. In a baking dish, mix all ingredients (except the Cheddar cheese.
3. Cover with foil and bake for about 1- 1 1/4 hour.
4. Remove the foil, add the Cheddar cheese and bake for about 20 more minutes.
One serving is approximately 80 grams.
